Ingredients

1 Kombucha SCOBY

2 liters of Spring water

140 grams of Powdered sugar

5 teaspoons of Black tea

3 teaspoons of Green tea

10 tablespoons of Apple cider vinegar

Preparation

Step 1 : To prepare kombucha, start by bringing half of the spring water to a boil in a pot.

Step 2 : Meanwhile, in a large bowl, place the sugar and tea leaves, then pour the boiling water over them and let infuse for 10 minutes.

Step 3 : Stir to completely dissolve the sugar.

Step 4 : After the infusion time, strain the mixture and transfer it to a jug.

Step 5 : Add the remaining cold water and apple cider vinegar.

Step 6 : If you have previously prepared kombucha, you can replace the vinegar with a glass of this "mother" beverage.

Step 7 : Mix well before proceeding.

Step 8 : Place the kombucha SCOBY with the viscous part in contact with the beverage in the jug and ferment for 7 to 10 days in a place at room temperature.

Step 9 : It is important to note that higher temperatures will speed up fermentation.

Step 10 : During this process, you can taste the kombucha to adjust its desired level of sweetness, remembering that a more acidic kombucha will have more pronounced medicinal properties.

Step 11 : At the end of fermentation, remove the kombucha SCOBY from the beverage and distribute the infusion into bottles with mechanical caps.

Step 12 : Store in a cool place to preserve it.
