Rhubarb Water

500 grams of rhubarb
90 grams of powdered sugar
1 liter of water

Step 1 : To prepare the rhubarb water, first rinse the rhubarb stalks and remove the ends.
Step 2 : Then, cut them into cubes, eliminating the very fibrous parts and the 'threads'.
Step 3 : Next, place the rhubarb cubes in a bowl and mix with powdered sugar.
Step 4 : Cover the bowl with a clean cloth and let it rest at room temperature for 1 hour.
Step 5 : In a saucepan, bring the liter of water to a boil and add the sweetened rhubarb, mixing well.
Step 6 : Pour the mixture back into the bowl, cover, and macerate for at least 24 hours, keeping it at room temperature.
Step 7 : The next day, strain the mixture through a sieve to separate the rhubarb water.
Step 8 : Pour this liquid into a clean, airtight bottle, where it will take on a pink hue.
