Ingredients

1 kilogram of fresh tomatoes

1 kilogram of potatoes

500 milliliters of milk

1 salt and pepper

2 garlic

Preparation

Step 1 : Fresh tomatoes are cut into strips, and the potatoes are peeled, washed, and cut into large pieces.

Step 2 : Next, they are boiled in salted water until tender, about 20 minutes.

Step 3 : Then, they are mashed through a sieve, and enough milk is added to obtain a fairly thick purée.

Step 4 : The purée is placed in a large bowl and topped with slices of fresh cheese.

Step 5 : Heating to medium power, it is mixed with a large wooden spoon, lifting the mixture vertically about fifty centimeters above the pot.

Step 6 : The mixture should be well stretched to become soft, smooth, and fibrous.

Step 7 : Season with salt, pepper, and garlic if desired, and continue mixing for about 10 minutes.

Step 8 : Once ready, it is served to enjoy.
