8 rancid croissants
100 grams of almond powder
70 grams of sliced almonds
100 grams of powdered sugar
100 grams of softened butter
24 centiliters of water
2 large eggs
3 tablespoons of amber rum
1 teaspoon of bitter almond extract
1 salt
Preparation
Step 1 : Pour the water, amber rum, and 2 tablespoons of powdered sugar into a saucepan and bring to medium heat, cooking for 1 minute until the sugar dissolves.
Step 2 : Once the syrup is ready, remove the pan from heat and let it cool.
Step 3 : In a food processor, combine the almond powder, salt, diced butter, and the remaining powdered sugar.
Step 4 : Mix until achieving a smooth consistency.
Step 5 : Add the bitter almond extract, eggs one by one, beating until you get a cream.
Step 6 : Preheat the oven to 180°C and line a baking tray with parchment paper.
Step 7 : Cut the croissants in a cross shape and soak them with the syrup.
Step 8 : Then, fill them with the almond cream and place on the tray.
Step 9 : Cover with more cream and sliced almonds.
Step 10 : Bake the croissants for 12 to 15 minutes, until the cream is set, then let them cool on a wire rack.
Step 11 : Optionally, sprinkle with powdered sugar before serving.
