Oysters au Gratin with Parsley
Ingredients
36 Oysters
4 Garlic cloves
12 Parsley sprigs
200 grams of Coarse salt
100 grams of Butter
100 Breadcrumbs
1 Salt and pepper
Preparation
Step 1 : To start, preheat the oven to grill position or to step 9 (270°C).
Step 2 : Next, peel, pit, and chop the garlic, and wash, dry, and chop the parsley, reserving one tablespoon.
Step 3 : Add the remaining parsley to the bowl with the chopped garlic and butter, season to taste, and knead with your fingertips until a homogeneous mixture is obtained.
Step 4 : Then, proceed to open the oysters and drain the water.
Step 5 : Place a thick layer of coarse salt in a pan and arrange the oysters on top, pressing them enough to keep them stable.
Step 6 : Spread each oyster with the parsley butter and sprinkle with breadcrumbs, seasoning with salt and pepper.
Step 7 : Next, place the oysters in the oven for 5 minutes.
Step 8 : Once ready, place the hot oysters on a serving dish and finish by sprinkling the remaining parsley on top.
