Ingredients

160 grams of Powdered sugar

160 grams of Almond flour

140 grams of Egg whites

180 grams of Sugar

2 teaspoons of Unsweetened cocoa powder

15 centiliters of Heavy cream

250 grams of Cooking chocolate

10 grams of Butter

Preparation

Step 1 : To prepare the macarons, start by beating the egg whites in a food processor at a constant speed.

Step 2 : Then, add the sugar in two stages: the first half when the mixture is foamy and the second half when the mixture is white but still liquid, beating until a firm meringue forms.

Step 3 : Next, sift the almond flour and powdered sugar, mix, and fold into the meringue until you get a smooth, shiny ribbon.

Step 4 : Using a piping bag, pipe the macarons and let them rest for 10 minutes on a hot baking tray before baking at 140-145°C for about 10 minutes.

Step 5 : For the chocolate ganache, place the heavy cream in a saucepan and wait until it boils.

Step 6 : Then, remove from heat and add the chopped chocolate, stirring with a wooden spoon.

Step 7 : Next, add the butter and mix until dissolved, beating the ganache until it is slightly frothy.

Step 8 : To assemble the macarons, place two shells together and put a spoonful of ganache on each flat side.

Step 9 : Finally, let them rest in a cool place and serve on the same day or the following days, accompanied by coffee or tea.
