Ingredients

120 grams of white almond flour

120 grams of powdered sugar

135 grams of raw sugar

105 grams of egg white

1 Filling of your choice: jam, spread, praline

1 food coloring

Preparation

Step 1 : To prepare the macarons, start by sifting the almond flour and powdered sugar, then mix them and set aside.

Step 2 : Cook the egg whites in a double boiler and beat them until they are frothy and white.

Step 3 : Gently add the raw sugar to make the meringue, mixing until you get a shiny mousse.

Step 4 : Carefully pour the meringue into the almond and powdered sugar mixture.

Step 5 : Then, pipe the mixture onto a baking sheet lined with parchment paper, forming the macaron shells.

Step 6 : Tap the tray to remove air bubbles from the shells and let them rest for 40 minutes.

Step 7 : Preheat the oven to 150°C and bake the shells for 13 minutes.

Step 8 : Remove the shells from the parchment paper and place them on a cooling rack.

Step 9 : Once completely dry, fill them with your choice of jam, spread, or ganache, and sandwich two shells together.

Step 10 : Refrigerate the macarons overnight before enjoying.
