Once the chestnuts are peeled and cooked in vanilla milk, a nest is created with the resulting cream and filled with soft, creamy whipped cream.

Ingredients
500 grams of chestnuts
1 vanilla bean
150 grams of sugar
250 milliliters of milk
1 whipped cream
Preparation
Step 1 : Start by cutting the skin of the chestnuts all around.
Step 2 : Then, place the chestnuts in a saucepan with water and bring to a boil for approximately 30 minutes.
Step 3 : In a separate pot, boil the milk with the vanilla bean and sugar.
Step 4 : Once the chestnuts are cooked, peel them quickly, removing them from the water one by one, and without letting them cool, place them in the boiling vanilla milk to finish cooking for about 15 minutes.
Step 5 : Then, drain the chestnuts through a fine strainer and process them in a blender to obtain a cream.
Step 6 : Put this chestnut cream into a piping bag with a fine round nozzle.
Step 7 : Take a previously buttered and sugar-dusted savarin mold.
Step 8 : Proceed to form a nest with the chestnut cream inside the mold.
Step 9 : Then, place the mold upside down on a cold round plate and carefully remove it to shape as desired.
Step 10 : Finally, fill the chestnut cream nest with whipped cream.
