Tarte Tatin
Ingredients
6 apples
1 shortcrust pastry
1 lemon
150 grams of sugar
70 grams of butter with salt
Preparation
Step 1 : In a baking dish or ovenproof pot, place the sugar and butter, letting it melt over low heat until a golden caramel forms.
Step 2 : Peel the apples and cut them into wedges, drizzling with lemon juice to prevent oxidation.
Step 3 : Arrange the apple wedges over the caramel, making sure there are no empty spaces.
Step 4 : Cover the dish and cook over low heat to allow the apples to caramelize for 10 minutes.
Step 5 : Preheat the oven to 180°C.
Step 6 : Then, roll out the shortcrust pastry with a rolling pin and place it over the dish with the apples.
Step 7 : Trim any excess pastry, folding the edges inward.
Step 8 : Poke the entire surface of the pastry to allow steam to escape during baking.
Step 9 : Bake the tart for 30 minutes or until it reaches a golden color.
Step 10 : Once ready, remove from the oven and let it cool on a wire rack.
Step 11 : Once cooled, invert the tart onto a serving plate and serve with a quenelle of crème fraîche or a scoop of vanilla ice cream.
