Ingredients

250 grams of lamb or mutton

3 tomatoes

2 carrots

1 zucchini

1 turnip

2 onions

2 celery stalks

100 grams of chickpeas

70 grams of noodles

2 tomato paste

5 centiliters of olive oil

1 teaspoon of turmeric

1 teaspoon of paprika

1 teaspoon of ras el hanout

2 fresh cilantro

1 Salt and Pepper

Preparation

Step 1 : For the preparation of Chorba soup, the chickpeas should be soaked overnight in a large volume of water.

Step 2 : Subsequently, peel the vegetables and cut them into large cubes, as well as the meat, which should be cut into small pieces.

Step 3 : In a large pot, heat the olive oil and caramelize the meat for 2 minutes on each side.

Step 4 : Meanwhile, chop the onions and grate the tomatoes.

Step 5 : Add the vegetables, tomatoes, and onion to the meat and sauté for 5 minutes, seasoning with salt and pepper to taste.

Step 6 : Then, add all remaining spices and chop the cilantro, setting some aside for garnish, and add the rest to the pot.

Step 7 : Cover with 1.5 liters of water and cook over low heat for 20 minutes.

Step 8 : Next, add the tomato paste, noodles, and chickpeas, adjusting the seasoning if necessary.

Step 9 : Cover and cook for an additional 10 minutes.

Step 10 : Finally, serve the Chorba soup immediately, garnished with a little of the reserved fresh cilantro specifically for this purpose.
