Cucumber and Carrot Soup
Ingredients

500 grams of Carrots
1 Cucumber
1 tablespoon of Double cream
2 Vegetable broth cubes
1 Onion
1 liter of Water
20 grams of Butter
1 Salt and pepper
Preparation
Step 1 : Peel the onion and finely chop it, then sauté in a pot with butter for 5 minutes.
Step 2 : Meanwhile, peel the carrots and cut into rounds, then add them to the pot to fry for another 5 minutes, stirring regularly.
Step 3 : Peel the cucumber, cut into dice, and add to the pot as well.
Step 4 : Add the broth cubes and water, season with salt and pepper, and let cook for 20 minutes over medium heat.
Step 5 : Then, remove the pot from the heat and blend everything with an immersion blender.
