Ingredients

1 bunch of sorrel

3 potatoes

2 onions

2 chicken broth cubes

1 bunches of parsley, thyme

1 bay leaf

1 small chervil

4 tablespoons of fresh cream

3 teaspoons of butter

1 Salt and pepper

Preparation

Step 1 : Wash the sorrel and remove the stems.

Step 2 : Peel the potatoes, wash them, and cut into cubes; peel and chop the onion.

Step 3 : Dissolve two chicken broth cubes in 1 liter of hot water.

Step 4 : In a saucepan, fry the onion in butter.

Step 5 : Then, add the sorrel and let it melt for a few minutes before pouring in the chicken broth.

Step 6 : Next, add the chopped potatoes, parsley, thyme, and bay leaf, and simmer covered for about 20 minutes.

Step 7 : Put everything in a blender and season with salt and pepper, being careful, as the chicken broth already provides seasoning.

Step 8 : Return the vegetable soup to a saucepan and heat gently.

Step 9 : Pour the sorrel and potato soup into 4 bowls and add a spoonful of crème fraîche to each, a pinch of freshly ground pepper, and finally some chervil leaves to highlight the green and add a bit of freshness.

Step 10 : Serve hot.
